A Sensory and Culinary Match Made in Heaven – Yannick Alléno & Xerjoff Launch Saveurs Olfactives Dining Experience 

A groundbreaking dining concept that blends haute cuisine with luxury perfumery has arrived in the UK capital. Saveurs Olfactives, the immersive culinary experience created by Michelin-starred chef Yannick Alléno and luxury fragrance house Xerjoff, is now being hosted at Pavyllon London as the third stop on its international tour.

Following successful launches in Paris and Dubai, the innovative dining experience celebrates the powerful connection between taste and scent, creating a multi-sensory journey designed to evoke memory, emotion and place. Developed through a collaboration between Alléno – one of the world’s most decorated chefs – and Xerjoff founder Sergio Momo, the concept merges artistic perfumery and modern gastronomy in a format that pushes the boundaries of fine dining.

The Saveurs Olfactives experience will officially launch in London on March 16th, 2026. Earlier in March, Xerjoff hosted an exclusive dinner to present the experience to VIPs, journalists, and creators. During the event, Yannick Alléno cooked live for the guests, collaborating with Xerjoff’s founder, Sergio Momo. Notable attendees included footballer Andriy Shevchenko and an unexpected guest – Anish Kapoor – who joined the chef and Sergio to add his own touch of creativity to the evening.

A Multisensory Dining Concept

At the heart of Saveurs Olfactives is the idea that fragrance can enhance the perception of flavour. For each city on the tour, a signature Xerjoff perfume is selected to inspire a specially crafted dish. Guests first encounter the scent through an olfactory ritual before tasting the dish it inspired.

In London, diners at Pavyllon London are presented with a unique ceramic cloche containing the fragrance Starlight by Xerjoff. Before the dish is served, the maître d’hôtel invites guests to lift the cloche and savour the aroma, allowing the perfume to shape and intensify the flavours that follow.

Throughout the meal, the cloche remains on the table, creating a lingering aromatic presence that continues to influence the sensory experience. To complete the journey, guests receive a gift box at the end of the meal containing a 15ml flacon of Starlight and the same ceramic cloche used during the experience.

London’s Dish Inspired by Starlight

The London edition of Saveurs Olfactives centres on Starlight, a warm and spicy fragrance from Xerjoff. The scent opens with a bold cardamom top note, whose green and spicy character remains present throughout the composition. At its heart lies cinnamon, adding depth and warmth.

Subtle notes of almond introduce smoothness, while amber and cedarwood provide a resinous richness that anchors the fragrance with a lingering, elegant finish.

These aromatic layers inspired the dish created by Alléno and the Pavyllon London culinary team, led by head chef Benjamin, which reflects the restaurant’s philosophy of modern French cuisine informed by seasonal British produce and global influences.

A Global Culinary and Olfactory Journey

Saveurs Olfactives first launched in June at Alléno’s three-Michelin-star restaurant in Paris before travelling to his two-star restaurant STAY in Dubai. The concept will continue its global journey to Monte Carlo and Seoul, with each location presenting a unique pairing of fragrance and cuisine inspired by the spirit of the city.

Chef Alléno currently holds 17 Michelin stars across 21 restaurants worldwide, including locations in London, Paris, Dubai, Courchevel, Seoul and Osaka. His Parisian flagship at Pavillon Ledoyen is home to three restaurants with a combined six Michelin stars.
